Do you have a go to pudding that is always guaranteed to please? Well, lemon meringue cheesecake is mine and the individual portions look very special. I prefer to make the base and the cream filling the day before then finish them off with Italian meringue on the day. Three pieces of kitchen kit are vital for this recipe – a sugar thermometer, an electric mixer (preferably freestanding) and small steel moulds (complete with a ‘pusher’), so make sure you have these items before you start. If you want to go for another fruit flavour then just replace the lemon curd with another fruit – passion fruit is a great option, with some fresh passion fruit on the side.
